CHICKEN SHAWARMA


Chicken Shawarma

Serves 4-6

This recipe is great to use the lovely green leaf lettuce, tomatoes, cucumber and onions from the box this week!  It’s super kid-friendly, as kids can make their own version depending on what they like.

Chicken Marinade

1 1/2 lbs boneless skinless chicken breasts (boneless skinless chicken thighs work too!)

Juice of 1 lemon

1/4 cup olive oil

4 cloves of garlic, minced

1 tbsp ground cumin

1 tbsp paprika

2 tsp ground turmeric

1 tsp ground cinnamon

1 1/2 tsp salt

1 tsp ground pepper

Garlic Sauce

1/2 cup greek yogurt

Juice of 1/2 to 1 lemon

2 cloves garlic, minced

1/2 seedless cucumber (from box!), grated on a box grater

1/2 tsp salt

Shawarma Assembly

1 package pita bread (normally have 6 pitas)

Tomatoes, sliced (from box!)

Green leaf lettuce, shredded (from box)

Red or White onion, sliced (from box)

1/2 seedless cucumber, sliced (from box)

Garlic sauce, recipe above (can sub Hummus for kids)

Grilled chicken, sliced.

1. Place chicken and all marinade ingredients in a ziploc bag.  Marinate at least 1 hour, up to overnight.

2. Grill chicken, let rest for 5 minutes, and slice thinly.  Warm pita bread and make sauce.

3.  Assemble pitas and serve immediately.
