Sauteed Snow Peas w/Parsley and Lemon Post author:Adam Batson Post published:June 30, 2020 Post category:RECIPES Sauteed Snow Peas with Lemon and Parsley from America’s Test Kitchen The Side Dish bible.1 tbsp Vegetable Oil, divided1 small shallot, minced1 tsp finely grated lemon zest plus 1 tsp juice1/4 tsp salt1/8 tsp pepper1/8 tsp sugar12 ounces snow peas, strings removed1 tbsp minced fresh parsley1. Combine 1 tsp oil, shallot and lemon zest in a bowl. In separate bowl, combine salt, peper, and sugar.2. Heat remaining 2 tsp oil in 12″ skillet over high heat until just smoking. Add snow peas, sprinkle with salt mixture, and cook without stirring 30 seconds. Stir briefly, then cook, without stirring, for 30 seconds. Continue cooking, until peas are crisp-tender, 1-2 minutes.3. Push peas to the sides. Add shallot mixture to center and cook, mashing mixture into skillet, until fragrant, about 30 seconds. Stir shallot mixture into peas. Stir in lemon juice and parsley and season with salt and pepper to taste.Serves 4Recipe courtesy of Kathy C.
