SHIRAZI

Shirazi
Shirazi is a Persian salad, perfect for the summer.  It’s fantastic as a salad, over grilled chicken or fish (see below), as well as over hummus with pita chips. Save this recipe for later this summer when more tomatoes and cucumbers will arrive and substitute basil for the fresh mint!

1 large tomato, chopped (from CSA box)
1 large seedless cucumber, chopped (from last week’s CSA box)
1 red or white onion, finely chopped (from CSA box)Generous handful of fresh parsley leaves, chopped
Handful (1/2 cup-ish) fresh mint leaves, chopped
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
salt and freshly ground black pepper, to taste 

1. Combine all ingredients in a large bowl.  Season to taste with salt and pepper.
2. Don’t have fresh mint or parsley?  You can use basil to make this a more Italian-style salad.  You can also omit the fresh herbs – still delicious!

Leftover salad?  It’s fantastic the next day over some hummus with some extra olive oil and crackers/pita chips!
