Rhu-BBQ Sauce

Rhu-BBQ Sauce

Makes 4 cups (approx)

1 cup rhubarb, chopped – from CSA box
1 large tomato, chopped – from CSA box
1 medium sweet onion, diced – available in farm store
2 cloves garlic, chopped – available in farm store

1/2 cup maple syrup
1/3 cup molasses
1 tbsp Worchestershire sauce
1 tbsp Apple Cider Vinegar
1/2 tsp salt
1/2 tsp cumin

1. Bring all ingredients to a simmer on medium heat.  Cook over medium heat, stirring occasionally (to avoid burning), about 30 minutes, until tomato and rhubarb are broken down.

2. Remove from heat and blend either using an immersion/stick blender, or transfer to a blender carefully.  Bring back to stovetop, and season to taste with salt.  Simmer until desired consistency is reached.

3. Use as a barbecue sauce that’s particularly delicious with pork (shown) or chicken, even shrimp.  Dish below shows grilled pork tenderloin, with the tomatoes, cucumbers and corn from this week’s box!
