Rhu-Berry Compote
makes about 2 1/2 cups
This is absolutely delicious as a sauce in a yogurt parfait, and also over ice cream!
1 cup rhubarb, chopped – in CSA box
3 cups ripe strawberries, chopped
1/2 cup granulated sugar
1/4 cup water
1. Bring all ingredients to a simmer over medium heat. Continue cooking, stirring occasionally, about 30 minutes, or until berries and rhubarb have broken down.
2. For a completely smooth compote, you can blend with a stick blender. Otherwise, let cool and serve over yogurt or ice cream.
