Ingredients:
2 large or 5-6 small sweet potatoes
1/4 cup Parmesan cheese (I love the fresh shredded they sell at Silverglades Findlay Market)
5 slices bacon
1-2 cloves garlic minced
Place a large saucepan of water on the stove and bring to boil. Wash, peel and cube potatoes. Place in boiling water and cook until fork soft. While potatoes are cooking, chop bacon and cook to desired doneness. Drain cooked potatoes in colander and return to saucepan. Remove from heat and mash (I use a blender for this step because I think it makes the potatoes more creamy). Add bacon, Parmesan and garlic. Stir to combine. Season with salt and pepper to taste (I generally find I don’t need either). Dig in and Enjoy!
These are yummy the first day but even yummier the second day after the flavors have had time to blend. I like to make large batches and freeze in single servings for a yummy winter treat….so good on a cold day!!
