Cucumber- cut for school, divided between 2 kids
Broccoli and cauliflower- dry pan to use over pasta later in the week
Dinner- salad (one of many lettuces +1/2 of kale +1/2 chard with radishea, green onion ,chia seeds,raisins) ; spinach frittata (all spinach,1/2 chard,mushrooms) ; tomatoes
All remaining greens (one bunch of green onions, 1/2 kale +bok choi+all other greens that were not salad) I cooked with some oil and salt (reduced a lot in volume; shown above) to use later in the week for green quiche
We have 2 salads,some onions and radishes left to chop and enjoy later:)
