How to..(Nov 19)

All greens but the spinach-clean, chop and steam (all I was left with is in the pot shown above). I plan to use ½ for quinoa and kale patties (recipe below); the other ½ of the green will go “for kale and beans soup” in the crock pot

I cut up both salads (used 2/3 for dinner as shown above,1/3 I take to work); put all cherry tomatoes and 2/3 of turnips (they are wonderful, my kids eat them like apples)

Spinach-steamed and served with feta cheese (shown above)

Orange cauliflower- made into mashed cauliflower with some left over potatoes (shown above)

Spaghetti squash I bake, scoop core and keep in the fridge (kids eat it for snacks). As I have quite a bit of this by now, I will make the soup below at some point during the week, it should take minutes as the squash is already cooked

 

Purple cabbage is best when eaten raw so I plan to use it for salads
