Easy Refrigerator Pickles
Makes 2 quarts of pickles
This is the most basic pickle for cucumbers and other veggies, and you can customize it however you wish. Fast and easy! Customize with a different vinegar, spices, or different vegetables such as green beans, zucchini etc.
2 cups water
1 ¼ cups white vinegar
1 tbsp kosher salt
3 tbsp granulated sugar
1 quart of pickling cucumbers (green beans are also delicious!) – from CSA box
4 slices of red or white onion – from CSA box
4 cloves garlic, smashed
1 tbsp black peppercorns
Sprinkle of crushed red pepper flakes (optional)
Fresh dill (optional) – add-on purchase in CSA farmstore
2 bay leaves (optional)
1.Place water, vinegar, sugar and salt into a saucepan over medium heat. Whisk until salt and sugar dissolves. Remove from heat.
2.Slice cucumbers and place into clean quart jars. Layer cucumbers with red onion, peppercorns, bay leaves and garlic, dividing between the 2 jars.
3.Carefully pour brine liquid over cucumbers into jars, ensuring the liquid covers the vegetables.
4.Cover and refrigerate overnight. They should be ready to serve the next day!
