A favorite recipe that I am making nearly every week is Southern-style green beans. These green beans are easy to make and go well with almost any dish, but go especially well with corn bread, sliced tomatoes, and fried fish. It can even be a main dish if you add Fair Ridge Farms’ new potatoes. All of my measurements are approximate. Add more or less of what makes sense to you. The recipe below contains pork but it is optional.

cooking time: 1 ½ to 2 hours
ingredients:
One bunch or two of green beans from the CSA box, trimmed
olive oil ½ large onion, diced
a bit of pork, such as diced ham or bacon (optional)
3-4 cups chicken or vegetable broth
new red potatoes from CSA box (optional) cut in half or 1 inch pieces
½ teaspoon smoked paprika
salt and pepper to taste
steps: Heat a heavy-bottomed pot over medium heat, adding olive oil. Saute onions and meat until onions are soft and translucent, adding salt and pepper to taste. Add green beans, broth, water to cover the beans, and smoked paprika. Cover and simmer for 45 minutes to an hour. Add new potatoes and simmer until potatoes are soft, about 45 minutes to an hour. Total cooking time for green beans is from 1-2 hours, depending on how you like them.
