I found this recipe on Smitten Kitchen (https://smittenkitchen.com/2011/08/zucchini-fritters/ ) and basically just adjust it to the amount of zucchini I have.
Zucchini Fritters
2 lb Zucchini shredded (about 5 C after liquid squeezed out)
2t Salt
2 Eggs
1 C Flour
1-2 Green onions finely chopped
1t Baking powder
Frying oil of choice
Pre-heat oven to warm. Shred zucchini either by hand or in food processor with shredding disc. Add 1t salt to zucchini and let sit for 5-10 minutes to juice up. In separate bowl combine flour and baking powder. Squeeze liquid from zucchini. A thin kitchen towel or cheese cloth works well but you can even just use your hands too. Add onion and salt to taste to the squeezed zucchini. Add two beaten eggs to the zucchini. Combine with flour and baking powder mixture to make a thick chunky batter ( cookie dough consistency). In an oiled pan or griddle drop cookie sized spoonfuls and fry over medium high heat for 3-4 minutes until golden brown. Flip and continue cooking for another 2 minutes to brown the other side. Transfer to baking sheet in warm oven to firm up (approx 10 minutes). Serve with spicy mayo or herbed sour cream.
