Zucchini Bread

Tonight, I tried to use up some Zucchini, by makin Zucchini Bread. It used up about 2 small zucchinis, so I’ve still got a lot to use – I’m thinking some zucchini fritters, zucchini noodles for the homemade tomato sauce I made last night, and I’m open to other suggestions.

1 1/4 c flour

3/4 tsp salt

1/2 tsp nutmeg

1 tsp baking soda

1/2 tsp cinnamon

1 1/2 c sugar

1/2 c vegetable oil

2 eggs

1/3 c water

1/2 tsp lemon juice

1/2 cup walnuts/pecans/other

Mix dry, mix wet, mix into each other. Bake at 350 F for about an hour or till a toothpick comes out clean.
