Lamb’s quarters is spinach-like plant with earthier/ mineral flavor. The entire plant, including the stems, is edible.
Nutritional Value
High in vitamin C and rich in riboflavin, one cup of cooked wild spinach provides an excellent source of vitamin A, folate, magnesium, potassium, vitamins E, B6, and thiamine. Wild spinach actually contains substantially more nutrients than cultivated spinach.
How to use
Lamb’s quarters is best in cooked preparations, but it can be eaten fresh in a salad. Think of it as regular spinach and enjoy:)
