1 tbsp olive oil
2 shallots minced
2 cloves garlic minced
1 chicken breast seasoned with salt and pepper (chopped into small pieces)
4 fresh tomatoes chopped in small pieces
S&p to taste
1/4 cup balsamic vinegar
2 tbsp minced fresh basil
1 tbsp minced fresh oregano
Heat oil in skillet on medium heat, add shallots and garlic and saute/fry till nearly golden (fragrant and soft). Add chicken and cook till cooked through but not browned, stirring frequently. Add tomatoes and their juice and increase heat to medium-high. Add balsamic vinegar and salt and pepper to taste. Continue cooking, stirring occasionally, until juices have mostly evaporated (about 20-30 min) add herbs and cook for another 5ish min. Serve over pasta.
