Succotash is a classic way to feature summer vegetables.

Saute one onion and one bell pepper in olive oil, 5 minutes.  Add chopped garlic, saute one minute.  Add kernels from 4 ears of corn, 3 cups chopped tomatoes, shelled Lima beans, and chopped zucchini.  Simmer on medium-low, 30 minutes.  Season with salt and pepper, to taste.  At the end of cooking, add a handful of chopped fresh basil.
