Spanakopita-Inspired Creamed Spinach (w Lemon-Feta Salmon) Serves 4, as a side
Try this twist on creamed spinach, with feta cheese and onion instead of the traditional Parmesan-Gruyère mixture.
2 tbsp butter 3 green onions, chopped – FROM CSA BOX 3 cloves garlic, finely chopped 1 large bag of spinach (about 8 oz), chopped – FROM CSA BOX 2 tsp salt Freshly cracked pepper 1/3 cup half and half or heavy cream 1/2 cup crumbled feta cheese
1) Heat oven to 375. In a medium oven-safe skillet over medium high heat, melt butter. Add in garlic and onion, cooking until fragrant.
2) Add spinach, salt snd pepper. Cook down until all water is cooked out of spinach. Stir in cream. Crumble feta cheese evenly on top.
3) Place skillet in oven, and bake for 15 minutes. This is a great as a side with salmon, chicken, beef.
