Roasted Broccoli Salad

Original recipe.

2 cups chopped fresh broccoli florets

1 tbs olive oil

1/4 tsp salt

1/8 tsp pepper

1/4 cup shredded Parma

1/4 cup delivered almonds

1. In a large bowl, toss broccoli and oil together. Sprinkle with salt and pepper. Then drizzle with 2 tbs lemon juice.

2. Place in ungreased air fryer basket. Set temp at 350 degrees for 7 minutes. Shake halfway.

3.return to bowl and add 2 tbs lemon juice, almonds and Parma.

I made this air fryer recipe this morning using broccoli from yesterday’s box. The whole head of broccoli was twice what the recipe called for so I doubled the recipe. I saved the stalk to stir fry later. I discovered I didn’t have enough lemon so I used half lemon and half balsamic vinegar.

I added some craisins to counter the acid in the vinegar. It tastes good now. Should be better later. I’m thinking that for future iterations of this recipe I might add optional ingredients like different types of vinegars, sunflower seeds, hard boiled eggs, different cheese, etc. If anybody tries recipe and adds enhancements please let me know.
