Wash the beets; place on a baking sheet and bake (425F for about 1h); let cool, then peel with your fingers; slice

Peel the beets, cut up in thin slices; sprinkle with pepper, oil and salt; bake (425F for about 45min)until tender
You can eat roasted beets cold or warm. They go great with a spinach salad or in a lettuce with hummus and veggies wrap.
Once cooked they keep in the fridge for a good while.
