Mish mash (peppers and eggs dish)

Wash / Cut up 3-4 peppers
Cut up 1 onion (green onion ok)
4-5 eggs
Feta cheese (any other kind would work also)
Fresh parsley

Simmer peppers and onions over medium heat with some oil/salt
When tender add the eggs and cheese; mix well
Cook until eggs are done
Sprinkle parsley over the ready dish to make it pretty
