Homemade Tomatoe Sauce

Wash tomatoes (any kind) well ; remove bad parts/stems ; roughly chop.You can use ugly tomatoes and those that are bruised/soft
Place in a baking pan with chopped onions / minced garlic / eggplant/ carrots/ zuccini/ olive oil / fresh basil / oregano / black pepper / salt (varies by taste)
Bake at 425F for about 50 min
Let cool; mix in a blender ; place in freezer bags
Store in the freezer for up to 6 months.
Can be used for pasta dishes; for warm tomatoes soup or for cooking instead of tomatoes puree/canned tomatoes
