Sometimes the best way to eat fresh vegetables is raw. You can make salads that don’t have a lettuce base or you can serve these dressings over steamed or roasted vegetables and rice. I like to serve the tahini dressing with chopped tomatoes, cucumbers, and peppers with steamed brown rice on the side.
Tahini dressing
Mix the following in a food processor or blender:
Juice of 1 lemon
1-2 garlic cloves, minced
1/2 cup water
1/2 cup tahini
1 tsp honey
1 1/2 tsp tamari
1 tsp coriander
1 tsp cumin
2 tbsp olive oil
1/4 tsp sat
optional: you can add a bit of yogurt.
Miso Ginger Dressing
Mix the following in a food processor or blender. This dressing also goes well with steamed fresh vegetables–like yard-long beans–and rice.
1 tbs rice vinigar
1 tbs miso
2 tsp grated ginger
1 clove garlic
1/2 tsp sugar or honey
pinch pepper
3 tbsp oil, like peanut or coconut
