Greens Quiche
Wash and chop a bunch of Fair Ridge Farms’ chard with stems removed and greens from a bunch of carrots. Saute with some olive oil and some chopped onion and garlic. Transfer to a bowl and add cheese (feta or any other crumbly cheese ), 3-5 tbsp. of yoghurt, a touch of baking powder, and flour or bread crumbs. Bake until set.
Stuffed peppers
Saute 2-3 chopped onions, 2-3 carrots, and 1 zucchini. Add rice (any other grain) and saute until fragrant. Add some water and let the rice cook until almost done. Add some raisins and green herbs (parsley goes well). Then, cut bell peppers on half, fill them with the rice, add a bit of water to the pan and bake until peppers are tender.
