Wash and boil beets (takes at least 45min). Marinate in vinegar, oil, salt (keeps well in the fridge for a long time)
Cut up and wash the greens of the beets / freeze along with 1/2 of the chard (wash/cut)
Steam the other 1/2 of chard for chard/lemon/sesame seed salad
Wash and cut up green beans and the one onion for stir fry (oil, salt ,little bit of water,10 min or so on high heat)
Cut up melons/ tore in plastic containers in the fridge for snacks/lunches
Peel ,cut up the 2 cucumbers (1 for me for work today; the other I spilt between the two kids for school lunch)
Peel, wash, roughly cut all potatoes (white and red). Boil in MW (~15min). Mash with butter/milk/salt
Broccoli will become broccoli cheddar soup and zucchini will become zucchini muffins this weekend.
