Fair Ridge Special Recipe

This is a typical dinner we like to have on CSA delivery day.  It’s fast, simple, and showcases the veggies at their peak! I love that I can slowly work on getting this meal ready throughout the day as I have a few minutes.  Everything can be done early and put in the fridge ready to go! It is a great excuse to get veggies prepped right away.

Hard boil eggs. *Peel the eggs and cut them in half.  Set aside to cool for a few minutes.  If time allows I pop the yolks out and mix with yellow mustard, mayo or oil, and salt to taste.  Then I use a spoon to dollop the deviled yolks back into the egg whites. Garnish with paprika or dill.  Refrigerate until dinner.  For a quicker dinner just drop the deviled part and just sprinkle the eggs with salt and paprika.
 
  *Peeling tip: Eggs as fresh as we get them from Fair Ridge can sometimes be a little difficult to peel.  After trying several so called perfect peeling tips, I have settled on this method— After draining the hot water transfer your hard boiled eggs into a cold bowl of water. Give each egg a good crack to allow heat out.  Whirl the eggs around in the water for a minute before peeling. This usually helps the peel to separate from the hot eggs much easier.
 
Prep any veggies and fruit to just eat raw.  Serve with any condiments you’d like—hummus, ranch, Taziki, cottage cheese, yogurt etc. 
 
Some other nice additions to the meal can be various cheeses, meats (like salami or prosciutto or even jerky) nuts, bread, or crackers.  We did some tortillas in this picture. 
 
Yogurt dressing: 
1 cup plain yogurt
1 tsp salt
1 tsp garlic (fresh or powder works)
1 tsp onion powder ( fresh green onion is even better)
1/4 tsp black pepper
2 tsp dill
 
This dressing gets better as it sits in the fridge but can be made and used immediately if needed.
