This is a very simple, delicious vegetarian dish that is easy to prepare. Serves 4-5.
Ingredients:
2 tbs olive or coconut oil
1/2 onion, diced
2 peppers, diced
1 jalapeno or other hot pepper, diced
5 cloves of garlic, diced
2 large tomatoes, seeded and diced
1 tbs cumin
1 tbs turmeric
1 tsp curry powder
fresh or dried oregano–about a teaspoon
salt and pepper
2 cups cooked chickpeas
cilantro for garnish
cooked rice to serve with the chickpeas
Directions:
Heat oil in a large pan to medium heat. Add onions, peppers, and garlic, and saute until soft. Add spices and stir, cooking for a minute or so. Add tomatoes and chickpeas, stir, and simmer gently for about ten minutes, covered. Serve over rice and garnish with cilantro.
