Crunchy Broccoli Salad

8 cups. Broccoli florets

1 bunch green onion thinly sliced (I used 2 larger spring onions from previous box)

1/2 cup craisuns

3 tbs olive oil

3 tbs rice vinegar 

2 tbs sugar

1/4 c sunflower seeds 

3 bacon strips, cooked crumbled

In a large bowl combine broccoli, onions, and craisins. Whisk oil, vinegar and sugar and drizzle over broccoli, toss to coat. Refrigerate for hours and add bacon and sunflower seeds

Variations:

Creamy broccoli salad. Omit pill and vinegar and reduce sugar to 1 tbs. combine 1 cup mayo, 2 tbs. Cider vinegar and sugar. Pour over broccoli.

Broccoli/cauliflower version. Substitute 4 cups cauliflower florets.

I used the broccoli and cauliflower from this week’s box. I also added 2 chopped hard boiled eggs.
